Beet Ginger Sour

COCKTAIL OR ALCOHOL-FREE — The Beet Ginger Sour is definitely one of my favorites. If you don’t like beets, I would still give this drink a try. You will be amazed how user-friendly it is. Beets and ginger are also pretty good for your digestion, immunity, and skin health, so you can enjoy without feeling too bad.

The Beet Ginger Sour is a sour using lemon juice for tartness and Domaine Canton Ginger Liqueur for a ginger taste. You can replace the Domaine Canton with just ginger syrup if you’d like to enjoy without alcohol.

Ingredients

  • 2 oz beet syrup (recipe below)

  • 2 oz gin

  • 1 oz Domaine Canton (or ginger syrup, recipe below)

  • 3/4 oz lemon juice

  • 1/2 oz simple syrup

How to make Beet Syrup

  1. Cut off root ends of 3 medium beets. Peel the skin off of beets and cut into slices or cubes.

  2. Heat oven to 350 degrees. Roast beets on a aluminum covered baking sheet for 5 minutes.

  3. Bring a saucepan to boil with 1 cup of water. Stir in 1 cup of sugar or 1/2 cup of agave or honey.

  4. Add roasted beets and stir for 5-6 minutes or until the color is bright red. Don’t over boil; the color will change to dark red if it is over heated.

  5. Set aside and let cool. Store in an air tight container and keep in refrigerator. The syrup should last for 1-2 weeks.

How to make Beet Ginger Sour

  1. Combine beet syrup, gin, ginger liqueur or ginger syrup, lemon juice and simple sugar in a shaker with ice.

  2. Shake for 15-20 seconds.

  3. Strain and pour over ice in sugar rimmed glass
