Lemongrass Ginger Honey
COCKTAIL OR ALCOHOL-FREE — The Lemongrass Ginger Honey cocktail is a drink that’s versatile and flavorful. The herbal notes of lemongrass blend nicely with the kick of ginger. Honey ties everything together with a subtle sweetness. The key to this drink is the lemongrass shrub. If you don’t know what a shrub is, it’s a sweetner, herbs or fruit, vinegar, and water. For this drink, I think the lemongrass shrub is an essential element. I use apple cider vinegar with my recipe which provides an interesting layer to the drink. This drink can be either a cocktail or mocktail, and the lemongrass is crucial in either recipe. It’s the kind of drink that feels fancy but is surprisingly simple to make. The shrub adds a depth that not only lends to this mocktail, but is actually is quite healthy (yes you can have both!)
Ingredients
1 oz lemongrass shrub
1 oz lemongrass syrup
3/4 oz ginger liqueur or ginger syrup
1 oz melted honey
1 oz Honey Lavender tea
muddle sage
How to make a lemongrass shrub
Peel back lemongrass stalks. Cut 4-5 lemongrass stalks from the bulb upward. The goal is to bruise the stalks to release the flavor.
Combine 1 part sweetner (sugar, agave, or honey), 1 part apple cider vinegar, and 1 part water.
Let sit in refrigerator for 3-4 days. If possible, letting it sit for 1-2 weeks will deepen the flavor.
How to make a Lemongrass Ginger Honey
Muddle sage leaves in shaker.
Add lemongrass shrub, lemongrass syrup, ginger liqueur (Domanine Canton) or ginger syrup, melted honey, and Honey Lavender tea to a shaker with ice.
Shake for 15-20 seconds. Strain and pour over ice.
