Strawberry Coconut Mojito

The strawberry syrup in this mocktail is simple and useful for a ton of yummy, healthy beverages. I love using fresh strawberries from the market and the combination of coconut water and almond milk gives this drink a smooth finish.
Ingredients
2 oz strawberry syrup (recipe below)
2 oz coconut water (I recommend Bai Molokai Coconut)
1 oz almond milk
1/2 oz agave syrup
1/2 oz lime juice
mint leaves
How to make strawberry syrup
Take a box of strawberries and cut the tops off and dice them in halves.
Bring 1 cup water to a boil. Stir in strawberries and agave.
Leave to cool. Add mixture to blender and blend on pulse a few times.
Strain mixture using a colander to extract the juice. Store in refrigerator for 1-2 weeks.
How to make Strawberry Coconut Mojito
Muddle lime juice and mint leaves in shaker.
Add ice to shaker. Combine the remaining ingredients in the shaker and shake 15-20 seconds.
Pour in rocks glass. Garnish with mint leaves.
